Pre-heat oven to 220°C (200°C for a fan oven), 425°F, Gas Mark 7.
In a small bowl or jug, add a sachet of yeast, 2 tablespoons of sugar and 130ml of warm water, stir and set to the side.
In a separate bowl, mix together the 75g of cream cheese and 25g of icing sugar.
Next, place 250g of pizza flour into a medium sized bowl and add the yeast mixture. Stir together with a round bladed knife until you start to form a dough. Bring the dough together with your hands until it forms a smooth dough, adding a little extra water, drop by drop, or a little sprinkling of flour as needed.
Knead the dough for a couple of minutes on a lightly floured surface, then roll out to approximately 5mm deep and 30cm (12″) diameter.
Place on a pizza tray or large baking tray, and gently pinch the edge of the pizza to form a small raised crust.
Spread the cream cheese mixture over the pizza base and smooth over with the back of a spoon.
Bake in the oven for 12 – 15 minutes, depending upon how crispy you like your base.
Remove from the oven and top with 3 heaped tablespoons of chocolate spread to the top of the cream cheese. Spread the chocolate spread over the pizza with the back of a spoon, then sprinkle over the marshmallows, taking care not to burn yourself as the pizza and tray will be hot!
Lightly brush the crust with a little olive oil, then place the pizza back in the oven for a further 2-3 minutes until the marshmallows start to brown.
Once baked, remove from the oven and sprinkle with a couple of tablespoons of chocolate chips and a drizzle of chocolate sauce.
Allow to cool for a couple of minutes before serving.
