Lemon Posset

Ingredients

  • 1 Packet of Green's Lemon Pie Filling
  • 140 ml single cream
  • 140 ml water
  • 1 egg yolk

Method

  1. Blend 140ml single cream, 140ml water and one egg yolk together in a saucepan and add one sachet of Lemon Pie Filling.
  2. Heat gently, stirring continuously until the mixture comes to a boil.
  3. Simmer gently for one minute, while stirring.
  4. Divide between four shot glasses or small wine glasses, and leave to cool.
  5. Just before serving, sprinkle with icing sugar or pipe on some whipped cream, and decorate with raspberries
