Ingredients
- 221 g Green's Vanilla Sponge
- 2 Eggs
- 50 g Softened Butter
- 140 g Grated Carrots
- .25 teaspoon Ground Ginger
- .25 teaspoon Mixed Spice
- .25 teaspoon Cinnamon
- 30 g Peacans
- 20 g Raisins
- Water
Method
TO PREPARE THE CAKE:
Make up the vanilla sponge mixture as per pack instructions
Add grated carrot, spices, pecans and raisins and mix until all combined
Place into a lined baking tin and bake for 25-30 minutes or until golden brown
Leave to cool on a cooling rack
(Serve with cream cheese icing)
