Ingredients

  • 221 g Green's Vanilla Sponge link
  • 2 Eggs
  • 50 g Softened Butter
  • 140 g Grated Carrots
  • .25 teaspoon Ground Ginger
  • .25 teaspoon Mixed Spice
  • .25 teaspoon Cinnamon
  • 30 g Peacans
  • 20 g Raisins
  • Water

TO PREPARE THE CAKE:

Make up the vanilla sponge mixture as per pack instructions

Add grated carrot, spices, pecans and raisins and mix until all combined

Place into a lined baking tin and bake for 25-30 minutes or until golden brown

Leave to cool on a cooling rack

(Serve with cream cheese icing)
