Preparation Instructions

You will need:

Doughnuts: 75ml Warm Water, 20ml Milk, 50g Butter, 1 beaten egg (medium sized), oil for frying, flour for dusting.

Place the doughnut mix into a bowl and rub in the butter.

Add the yeast, warm water, beaten egg and milk and mix by hand until all the ingredients are blended well.

Transfer the dough onto a floured surface and knead well for 10 minutes.

Place the dough in a bowl and cover with a damp cloth.  Leave to rise in a warm place for 45 minutes until the dough has doubled in size.

Turn out the dough onto a lightly floured surface and knead for 1 minute.

Take a small piece of dough, approximately 45g and roll into a ball.  Place on a floured surface and pat gently until the dough is 1.5cm high.  Cut a hole approximately 3cm in diameter, from the centre of the dough.

TIP: The plastic lid from a water bottle works well.

Place the shaped doughnut onto a greased baking tray and place the small cut out piece of dough back into the bowl to be reused.

Repeat this step until all the dough has been used.  This will give approximately 14-16 doughnuts.

Leave to rise in a warm place for 15 minutes.

Heat the cooking oil to 140°C-160°C.

Carefully lower the doughnuts into the cooking oil in batches and cook for 1-2 minutes on each side until pale golden brown.

Remove from the oil with a slotted spoon, draining well and then place on kitchen paper to remove any excess oil.

Put icing mix in a bowl, add 20ml (4 teaspoons) cold water and mix until smooth. Add more water drop by drop if needed.

Decorate each doughnut with icing and then scatter the sprinkles over the topping whilst still wet.

Repeat until all doughnuts are decorated.

Leave to set, then enjoy.

Best served warm
