Ingredients

  • Green’s┬áVanilla Sponge Mix
  • 2 Tablespoons Ginger
  • 0.5 Tablespoon Mixed Spice
  • 2 Tablespoon Cinnamon
  • 50g Chopped Stem Ginger (optional)
  • 2 Tablespoons Ginger Syrup from jar (optional)

TO PREPARE THE ICED GINGER CAKE:

  1. Make up the sponge/vanilla cake mix as per instructions replacing the water for milk.
  2. Add the ginger, the mixed spice and the cinnamon. (optional) Add the chopped stem ginger and ginger syrup.
  3. Bake in a 1 1/2 – 2lb loaf tin for approx 25-30 minutes until skewer comes out clean.
  4. Either pour over additional ginger syrup or glaze with icing add more chopped ginger to serve.
