Ingredients

  • Vanilla Sponge 221g
  • 2 eggs
  • 50g butter
  • Water
  • Grated Carrots 140g
  • ¼ tsp ground ginger
  • ¼ tsp mixed spice
  • ¼ tsp cinnamon
  • 30g pecans
  • 20g raisins

Make Up Instructions

  1. Make up the vanilla sponge mixture as per back of pack instruction.
  2. Add grated carrot, spices, pecans and raisins, mix until combined.
  3. Place into a lined baking tin and bake for 20-25 minutes, or until golden brown.
  4. Leave to cool on a wire rack before enjoying.
  5. (Served well with cream cheese icing!)
