You can either use a pre-made pastry case or make your own crunchy biscuit base, by melting the butter in a pan and then mixed with biscuit crumbs. Leave to cool in the fridge while you follow the next steps.
1. Prepare Your Base.
Pre-heat oven to 150°C (140°C for fan oven)/ Gas Mark 2.
Place pre-baked pastry case onto baking tray.
Pour lemon pie filling (see pie filling instructions) into pastry case and allow to cool.
2. Prepare Your Meringue
Whisk 2 medium sized egg whites until stiff.
Whisk in 110g caster sugar (a quarter at a time) until all sugar is combined and meringue forms peaks.
Spread meringue over filling until completely covered.
3. Bake and Serve
Bake in centre of oven for 25 mins.
Serve warm or cold. If ward, allow to rest for 15 minutes before serving.
