HORACE'S HINTS - Spiced Apple & Raisin Crumble
INGREDIENTS:
- Pack of Green’s Oat & Raisin Cookies
- 4 Red apples, peeled, cored and chopped
- 50g (2 tablespoons) of light soft brown sugar
- 50g (2oz) of butter
- 60ml (4 tablespoons) of white wine
- 15ml (1 tablespoon) of milk
- Pinch of ground cinnamon
- Pinch of ground nutmeg
DIRECTIONS:
- Pre-heat the oven to 190°C (165°C for a fan oven), 375°F, Gas Mark 5.
- Melt the butter in a pan and add the apple pieces and cook gently for 5 minutes.
- Add the sugar, white wine, sachet of raisins, cinnamon and nutmeg, and boil for a further 10 minutes.
- Grease an oven proof dish and pour in the apple filling. There will be a fair amount of liquid at this stage – do not worry as this will become gooey syrup whilst baking in the oven.
- In a separate bowl mix the oat cookie mix with 15ml (1 tablespoon) of milk, until the mix becomes slightly moistened.
- Sprinkle the mix over the apple filling and bake in the centre of the oven for 25 minutes, or until bubbling and golden brown on top.
- To serve, transfer to a bowl and pour over some double cream.
