HORACE'S HINTS - Spiced Apple & Raisin Crumble

INGREDIENTS:

  • Pack of Green’s Oat & Raisin Cookies
  • 4 Red apples, peeled, cored and chopped
  • 50g (2 tablespoons) of light soft brown sugar
  • 50g (2oz) of butter
  • 60ml (4 tablespoons) of white wine
  • 15ml (1 tablespoon) of milk
  • Pinch of ground cinnamon
  • Pinch of ground nutmeg

DIRECTIONS:

  1. Pre-heat the oven to 190°C (165°C for a fan oven), 375°F, Gas Mark 5.
  2. Melt the butter in a pan and add the apple pieces and cook gently for 5 minutes.
  3. Add the sugar, white wine, sachet of raisins, cinnamon and nutmeg, and boil for a further 10 minutes.
  4. Grease an oven proof dish and pour in the apple filling. There will be a fair amount of liquid at this stage – do not worry as this will become gooey syrup whilst baking in the oven.
  5. In a separate bowl mix the oat cookie mix with 15ml (1 tablespoon) of milk, until the mix becomes slightly moistened.
  6. Sprinkle the mix over the apple filling and bake in the centre of the oven for 25 minutes, or until bubbling and golden brown on top.
  7. To serve, transfer to a bowl and pour over some double cream.
